(PETHA is the famous sweet of Agra)
- White pumpkin (1Kilogram)
- Kitchen Lime (Calcium Hydroxide - 2 Teaspoons)
- Sugar (800 grams)
- Rose Water (1 Teaspoon)
- Water (2 Cups)
- Kewra Essence (3 to 4 drops)
- Alum Powder (1/2 Teaspoon)
How to prepare Agra Petha Recipe?
Step1: Take 2 teaspoons of lime and dissolve it in water of 1 litre.
Step2: Take ½ cup of water and dissolve ½ teaspoon of alum powder in it.
Step 3: Now peel the white pumpkin and discard seeds and mushy center present it. Cut the peeled pumpkin into rectangular pieces of any size that you desire to and prick with a metal fork all over the pieces of pumpkin.
Step 4: Soak the pieces in lime water, soak them for 30 to 35 minutes and then drain and wash those pieces in running water for nearly 2 to 3 minutes.
Step 5: Coat all pieces of pumpkin with alum water by putting all of them in a bowl and sprinkling alum water on them.
Step 6: Now boil the pieces in a heavy pan until they become soft and emit water.
Step 7: Make syrup by boiling sugar with water until 2 ½ thread consistency, then drain pumpkin pieces in the syrup and again boil the syrup until it becomes thick, keep it like that overnight by covering with a mesh.
Step 8: Add water and boil the syrup again till it becomes thick and re-boil the syrup for 3 to 4 minutes after adding some more pieces.
Step 9: Drain excess syrup, then sprinkle rose water and kewra essence and then cool it completely by keeping it in a refrigerator.
Agra Petha recipe is done and ready to serve.
