If you have so many friends on Facebook then it is very difficult for you to actually know who is deleting you from their friend list. There is a userscript for Firefox known as Facebook Friends Checker which regularly monitors your friends list to know whether anyone has removed you from their list.

To run this script whenever you open your Facebook, first you need to go to the above mentioned link and install Facebook Friends Checker. After installing if the script finds that someone has removed you from their friends list then it will intimate you through a message on who removed you and also gives a link to their profile.
So how is it happening, actually what the script does is, at the background it will load all your friends names in a list, after some time it creates another list of your friends and compares it with the before friends list. If any one of your friends in the first list is not present in second list then it intimates you about that user. Now it saves the new friends list and removes the old one. The process carries on again and again. Finally this is how the script works.
By default the script checks the list every one hour, this time limit can be modified by installing Greasemonkey Add-on. After installing this, go to tools, select Greasemonkey, then select user script commands and set the time interval for checking friends list.
